Well, my perfect cozy morning doesn’t complete without a hot cup of coffee and my all times favorite breakfast – Classic, Old Fashioned Pancakes!
I love how easy it is to make pancakes, especially when time is of the essence in the morning. Between work and taking care of the kids, mornings can be hectic. But with pancakes, I can whip up a delicious breakfast without breaking a sweat.
So, let’s flip some pancakes and make mornings a little brighter!
What is a Pancake?
Well, it’s basically a flat cake made from a batter that’s mostly made of flour. You can add other yummy ingredients like milk, eggs, melted butter, or oil to give it that extra kick of flavor.
Did you know that pancakes have been around for centuries? Archaeological evidence suggests that they were probably one of the most popular foods in prehistoric times.

What is the best flour to make pancakes?
When it comes to flour, there are so many options to choose from – cake flour, bread flour, rye flour, and all-purpose flour, to name a few. But for pancakes, the best flour to use is All Purpose Flour(AFP).
Why APF?
Well, Cake flour has too little protein, which can make your pancakes fragile, and bread flour has too much protein, which can make them heavy and dense.
All-purpose flour, on the other hand, is just right. It’s a mix of hard and soft flour, so it will give you the perfect balance of fluffiness and texture for your pancakes.
Substitution of eggs for the Pancake recipe
There are plenty of other ingredients you can use to replace eggs in your pancake batter.
- Nut butter – like peanut butter or almond butter, can help bind the batter together and add a yummy, creamy flavor to your pancakes. Just use 2 tablespoons of nut butter to replace 1 egg.

Batter-making part:
- Take a big size bowl and a flour strainer. Place it over the bowl and drop 1 cup of flour on it. Also, add baking soda and a pinch of salt to it. Strain the mixture and keep it aside for later use.
- Take a bowl and crack 1 egg in it. Add sugar to it. Whisk the mixture until the sugar melts.
- Now add liquid milk, oil/melted butter, and vanilla essence one by one in the same bowl. Give it a good mix.
- Now it’s time to mix the dry and wet mixture together. Either add the dry mixture into the wet mixture little by little or pour the wet mixture little by little into the dry mixture.
- Then mix them together with the help of a spatula. You can also follow the cut-and-fold technique to mix them. Don’t over-mix, otherwise, your pancakes will not be soft enough.
Pancake frying part:
- Take a nonstick frying pan and heat it up (You can also use your griddle or whatever works for you). Drop little oil on the pan and wipe out the oil softly with a kitchen tissue (You can also use oil spray if it feels convenient to you).
- Keep the heat low to medium. Scoop pancake batter on the frying pan (Use your ¼ measuring cup to keep all the pancakes in the same size and shape). Put the lid on.
- A few minutes later you will see some bubbles on the pancake. Open the lid and turn over the pancake. Fry this side for a few minutes too. After browning both sides serve it.

The best pancakes ever, I put blueberries right into the mix and use butter on my Blackstone. It only makes six for me because they are oversized. It’s the extra baking powder that makes them so fluffy
