Cold rainy mornings of monsoon or freezing evenings of fall, a cup of warm Masala Chai or Spiced Milk Tea can be a quick and easy fix to make you warm. Besides, it can lighten numbness as well as laziness in your body. This tea can also break up your blocked sinus and gives comfort to your headache.
What is Masala Chai or Spiced Milk Tea?
“Masala” means Spices and “Chai” means Tea. Masala Chai or Spiced Milk Tea is a kind of beverage, Popular among the people of India and Bangladesh.
We make a special kind of powder mixture (Masala) out of dry toasted whole spices and store it in jars. Then we prepare regular milk tea and add the special spice powder mixture along with freshly crushed ginger to give those strong flavors. This special tea is what we called Masala chai.
What does Masala Chai or Spiced Milk Tea taste like?
As I have expressed earlier, Masala Chai has a sweet yet mild pungent taste. This pungency comes from whole spices that have been used to make the masala or powder mixture.
You will get a strong flavor of ginger as well. Besides, using full cream milk can give your tea a touch of creamy richness. Of course, that will add to the overall taste of the chai.
Overall, Masala Chai has a unique and strong taste. It also has an amazing aroma that can soothe your soul and calms down your mind.
What is Masala/Tea spice powder mixture?
Unlike regular tea, we will need a special kind of spice mixture called “Masala” to prepare this tea.
Masala is made of different kinds of whole spices like cardamom, cinnamon, cloves, fennel seeds, black pepper pods, nutmeg, etc.
You have to dry the toast and ground them to powder. Make this mixture at once and use it whenever needed.
Can we store the spice mixture?
This spice mixture is the heart of Masala Chai. You can store the mixture for up to two weeks in an air-tight jar. Keep the jar in a dry place.
By following my recipe to make Masala, you will be able to make almost 6-7 cups of tea. Besides the proportion and quantity of all the whole spices that I have used in this recipe, will give your tea a nice balanced taste and aroma.
What can be served along with this tea?
To be honest, you don’t need anything else to accompany Masala milk tea. This tea itself is a wholesome item to enlighten your mood. But I often serve my favorite snacks side by side. Such as-
- Fried onion rings
- Chanachur (a popular Bangladeshi snack which is consist of spicy dried ingredients like peanuts, chickpeas, lentils, and more)
- Pakoras (made with flour, onion, and different vegetables)
- Jhal Muri (Popular Bangladeshi street food made with puffed rice, raw onions, tomatoes, and spices)
- Vegetable chips etc.
Out of all these snack options, Chanachur and Masala Chai combination is my personal favorite. Snacks along with this marvelous tea can be a great starter for your sudden guests as well.
What kind of tea can be used to prepare this chai?
Typically black tea leaves, granules, and bags are used to prepare this tea. I also prefer organic black tea granules to prepare my cup of chai, though Assam or Darjeeling tea also can be used.
Equipment used for Masala Chai Recipe:
- Teapot
- Tea strainer
- Morter and pestle (stone spice grinder)
- Electric spice grinder
- Tea kettle
- Tea set
- Ginger grater
- Spice jars/containers
- Frying pan (to toast spices)
- Spatula
- Spice rack/spice organizer
Ingredients used for Masala Chai Recipe:
Masala/Tea Spice Powder Mixture:
- Green Cardamom 8-9 pieces
- Cloves 5-6 pieces
- Cinnamon 1 stick (medium size)
- Nutmeg 2 small cracked pieces
- Black pepper pods 5-6
- Fennel seeds 1 tsp
Masala chai/Spiced milk tea:
- Liquid milk 2 cups
- Water ¼ cup
- Sugar 4 tsp (or as per your taste)
- Fresh ginger 1 inch (smashed)
- Masala/Spice powder mixture 1 tsp
- Chai/Tea leaves 2 tbsp
How to make Masala Chai Recipe?
Preparing Masala/Spice Powder Mixture:
- Take a frying pan and put green cardamom, cloves, cinnamon, nutmeg, black pepper pods, and fennel seeds one by one in that pan.
- Dry toast with all these ingredients for a few seconds.
- Now cool down those whole spices and grind them with the help of a mortar and pestle. You can also use an electric mixture or spice blender to prepare the powder as well. No need to make fine powder, coarsely ground will be enough.
- Transfer the powder mixture into an air-tight glass bottle or jar and keep it aside for later use.
Preparing the Tea:
- Before starting to make the tea, cut 1-inch size ginger and smash it with a pestle. Keep it aside.
- Take a tea-making pot and pour 2 cups of liquid milk. Also, add ¼ cup of water to the pot. (Instead of liquid milk, you can also take 2 cups of water. When it will become warm, add 4 tbsp of powder milk to the water and mix. Then follow the other procedure as it is.)
- Then add 4 tsp of sugar or add sugar as per your taste in it. Give a mix and let it boil. (Actually, you can skip mixing sugar at this point and can mix in the tea while serving.)
- After 1 or 2 boiling of the milk, add 2 tbsp of tea leaves. Mix and wait until another 1 or 2 boiling.
- Now lower down the heat and add smashed ginger. Then add the required amount of masala or spice powder mixture. Give it a good mix and wait for another boil. Let all the spices infused in the tea.
- When you will get your desired color and smell of tea, turn off the stove.
- Serve it hot with your favorite snacks.
