Ingredients

  • 2 boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup cooked rice
  • ½ cup black beans drained and rinsed
  • ½ cup corn kernels
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese cheddar or Mexican blend
  • ½ cup salsa
  • ¼ cup sour cream
  • 1 avocado sliced

Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add sliced chicken, toss to coat, and let it marinate for at least 10 minutes.
  • Cook the Chicken: Heat a skillet over medium-high heat. Add marinated chicken and cook for 5-6 minutes on each side until fully cooked. Remove and set aside.
  • Sauté the Vegetables: In the same skillet, add a little more olive oil and sauté the bell peppers until tender.
  • Assemble the Bowl: Divide cooked rice among serving bowls. Top with cooked chicken, sautéed peppers, black beans, corn, red onion, and cilantro.
  • Add Toppings: Sprinkle shredded cheese over the top, add salsa, a dollop of sour cream, and sliced avocado.
  • Serve & Enjoy: Mix everything together and enjoy your flavorful Chicken Fajita Burrito Bowl!

Notes

  • Marinate Longer: If you have time, marinate the chicken for at least 30 minutes for deeper flavor.
  • Use Fresh Ingredients: Fresh lime juice and crisp veggies enhance the taste.
  • Customize It: Swap rice for quinoa or cauliflower rice for a low-carb option.
  • Double the Batch: Make extra chicken and store it for easy meal prep during the week.
