Prepare the Watermelon: Remove seeds (if any) and cube the watermelon. You’ll need about 4 cups.
Blend: In a blender, combine watermelon cubes, lime juice, sweetener (if using), and a pinch of salt. Blend until smooth.
Strain (Optional): For a smoother texture, pour the mixture through a fine mesh strainer to remove pulp.
Fill Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
Insert Sticks: Place the sticks into each mold and secure.
Freeze: Freeze for 4–6 hours or until completely solid.
Unmold & Enjoy: Run warm water over the outside of the mold for a few seconds to loosen, then gently remove and enjoy!
