Ingredients

  • 4 cups seedless watermelon cubed
  • 1 tablespoon lime juice optional for tang
  • 1 –2 tablespoons honey or maple syrup optional, based on sweetness of watermelon
  • Pinch of salt optional, enhances flavor

Instructions

  • Prepare the Watermelon: Remove seeds (if any) and cube the watermelon. You’ll need about 4 cups.
  • Blend: In a blender, combine watermelon cubes, lime juice, sweetener (if using), and a pinch of salt. Blend until smooth.
  • Strain (Optional): For a smoother texture, pour the mixture through a fine mesh strainer to remove pulp.
  • Fill Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  • Insert Sticks: Place the sticks into each mold and secure.
  • Freeze: Freeze for 4–6 hours or until completely solid.
  • Unmold & Enjoy: Run warm water over the outside of the mold for a few seconds to loosen, then gently remove and enjoy!

Notes

  1. Use Ripe Watermelon: The riper the watermelon, the sweeter and juicier your popsicles will be.
  2. Don’t Skip the Lime: A splash of lime adds a refreshing, tangy contrast.
  3. Adjust Sweetness: Taste before freezing—if it’s already sweet, skip the honey or maple syrup.
  4. Try Fruit Layers: Add a slice of kiwi or a few blueberries before freezing for a fun visual and taste twist.
