Ingredients

  • 4 cups watermelon cubed or balled
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves roughly chopped or torn
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Pinch of sea salt optional
  • Freshly ground black pepper optional

Instructions

  • Prep the Watermelon – Cut your watermelon into bite-sized cubes or use a melon baller for a fancier look.
  • Chop Mint – Roughly tear or chop fresh mint leaves. This brings out the fragrance.
  • Mix the Base – In a large mixing bowl, combine watermelon cubes and chopped mint.
  • Add Dressing – Drizzle the lime juice and olive oil over the mix. Toss gently to coat.
  • Add Feta – Gently fold in crumbled feta to keep it from breaking apart too much.
  • Season (Optional) – Add a pinch of sea salt and freshly ground black pepper to taste.
  • Chill or Serve – Serve immediately or chill for 10–15 minutes for extra refreshment.

Notes

  1. Use Cold Watermelon – Chill the melon before cutting for the most refreshing result.
  2. Buy Good Feta – Use block feta and crumble it yourself for better texture and flavor.
  3. Tear Mint by Hand – This helps release natural oils without bruising the leaves.
  4. Serve Immediately – Watermelon releases water quickly; serve fresh to avoid sogginess.
