Ingredients

  • 2 boneless skinless chicken breasts
  • 2 cups cooked rice white or brown
  • 2 cups corn kernels fresh, frozen, or canned
  • ½ cup mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ cup crumbled feta cheese
  • ¼ cup fresh cilantro chopped
  • 1 tablespoon cotija cheese optional, for garnish
  • Lime wedges for serving

Instructions

  • Prepare the Chicken: Heat a grill or stovetop pan over medium-high heat. Season the chicken breasts with salt, pepper, chili powder, and garlic powder. Add a little olive oil to the pan and cook the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F. Let it rest before slicing.
  • Prepare the Street Corn: In a small bowl, mix together mayonnaise, sour cream, lime juice, smoked paprika, salt, and pepper. If using fresh or frozen corn, grill or sauté the corn until slightly charred (about 5-7 minutes). If using canned corn, heat it up in a pan for 3-4 minutes until warmed. Once done, combine the corn with the mayonnaise mixture and mix well.
  • Assemble the Bowl: In each serving bowl, add a portion of cooked rice. Top with sliced chicken, then spoon the street corn mixture over the chicken and rice. Sprinkle with feta cheese, fresh cilantro, and optional cotija cheese.
