Ingredients

  • 2 cups fresh strawberries hulled
  • 1 ½ cups plain or vanilla Greek yogurt
  • 2 –3 tablespoons honey or maple syrup optional, adjust based on sweetness of strawberries
  • 1 teaspoon lemon juice optional, for brightness
  • ½ teaspoon vanilla extract optional

Instructions

  • Prep the Strawberries: Wash and hull the strawberries. If they’re large, cut them in halves or quarters for easier blending.
  • Blend the Ingredients: In a blender, combine strawberries, yogurt, honey, lemon juice, and vanilla extract. Blend until smooth. You can leave some strawberry chunks if you like a bit of texture.
  • Taste Test: Taste the mixture and adjust sweetness as needed.
  • Pour into Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Tap the mold gently on the counter to remove air bubbles.
  • Insert Sticks & Freeze: Place the sticks into the molds and freeze for at least 4 hours or overnight until solid.
  • Unmold & Enjoy: To release, run the molds under warm water for a few seconds. Gently pull out the popsicles and serve immediately.

Notes

  1. Use ripe, sweet strawberries – The riper the berries, the less sweetener you’ll need.
  2. Go for full-fat yogurt – It creates a creamier texture and better mouthfeel.
  3. Freeze overnight for best results – While 4 hours might be enough, overnight ensures a solid freeze.
  4. Loosen gently with warm water – Never force the pops out, or they might break. Warm water loosens them easily.
