Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 6 cups mixed greens arugula, spinach, or spring mix
  • 1 cup fresh strawberries hulled and sliced
  • ¼ cup red onion thinly sliced
  • cup crumbled feta or goat cheese
  • ¼ cup candied pecans or walnuts
  • 2 tablespoons balsamic glaze store-bought or homemade
  • Optional: avocado slices or cucumber for extra freshness

Instructions

  • Season & Cook the Chicken: Pat chicken breasts dry, then season with salt and pepper. Heat olive oil in a grill pan or skillet over medium-high heat. Cook the chicken for 4–5 minutes per side or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice thinly.
  • Assemble the Salad Base: In a large bowl or on a platter, arrange mixed greens as your base.
  • Add Toppings: Layer sliced strawberries, red onion, feta cheese, and candied nuts over the greens.
  • Add Chicken: Place sliced grilled chicken over the top of the salad.
  • Drizzle & Serve: Finish with a generous drizzle of balsamic glaze. Serve immediately and enjoy!
