Ingredients

  • 1 lb (450g) ground chicken
  • 1 tablespoon sesame oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • ¼ cup hoisin sauce
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon chili garlic sauce adjust to spice level
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar optional
  • ½ cup water chestnuts chopped
  • 2 green onions thinly sliced
  • Butter or Bibb lettuce leaves about 10–12 leaves
  • Sesame seeds and extra green onions for garnish optional

Instructions

  • Step 1: Heat sesame oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes until translucent.
  • Step 2: Add minced garlic and ginger, cook for another minute until fragrant.
  • Step 3: Add ground chicken to the pan. Break it up with a spatula and cook for 5–6 minutes, until fully cooked and slightly browned.
  • Step 4: Stir in hoisin sauce, soy sauce, chili garlic sauce, rice vinegar, and brown sugar. Mix well to coat the chicken evenly.
  • Step 5: Add chopped water chestnuts and green onions. Cook for another 2 minutes to heat through. Remove from heat.
  • Step 6: Wash and separate the lettuce leaves. Spoon the chicken mixture into the center of each leaf.
  • Step 7: Garnish with sesame seeds and extra green onions if desired. Serve immediately and enjoy!

Notes

1. Use butter lettuce or Bibb lettuce for the best texture—they’re sturdy yet soft enough to wrap without tearing.
2. Taste as you go—adjust the spice level by adding more or less chili garlic sauce.
3. Meal prep friendly: Cook the chicken mixture in advance and store it in the fridge for up to 3 days.
4. Add texture and color: Top with chopped peanuts, shredded carrots, or sliced red chili for extra crunch and flair.
