Ingredients

For the chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper optional, for extra heat
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the peach salsa

  • 2 ripe peaches diced
  • ½ red bell pepper diced
  • ¼ red onion finely chopped
  • 1 jalapeño seeded and minced
  • Juice of 1 lime
  • 2 tbsp fresh cilantro chopped
  • Salt to taste

Instructions

  • Prepare the chicken: In a small bowl, mix smoked paprika, cumin, chili powder, garlic powder, onion powder, cayenne, salt, and pepper. Rub olive oil over the chicken breasts, then coat evenly with the spice mix.
  • Preheat the grill: Heat your grill or grill pan to medium-high heat.
  • Grill the chicken: Place the chicken on the grill and cook for about 6 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes.
  • Make the peach salsa: While the chicken cooks, combine diced peaches, red bell pepper, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Mix gently to combine.
  • Serve: Slice the chicken breasts and top generously with peach salsa. Enjoy as is or with a side of rice, salad, or tortillas.
