Ingredients

  • 4 cups Brussels sprouts shaved thinly

  • cup dried cranberries
  • ¼ cup grated Parmesan cheese optional
  • 1 small red onion thinly sliced
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  • Rinse Brussels sprouts and pat dry. Using a sharp knife or mandoline, shave them into thin strips and place in a large mixing bowl.
