  • 200 g (7 oz) digestive biscuits or graham crackers, crushed
  • 100 g (3.5 oz) unsalted butter, melted

For the Caramel Layer

  • 1 can (397g) sweetened condensed milk
  • 100 g (3.5 oz) unsalted butter
  • 100 g (3.5 oz) light brown sugar

For the Cheesecake Layer

  • 300 g (10.5 oz) cream cheese, softened
  • 200 ml (7 fl oz) heavy cream
  • 100 g (3.5 oz) powdered sugar

For the Chocolate Topping

  • 200 g (7 oz) dark or milk chocolate, melted
  • 50 ml (1.7 fl oz) heavy cream

Instructions

  • Prepare the Base: Combine the crushed biscuits and melted butter. Press the mixture firmly into a lined springform pan. Chill in the refrigerator while preparing the next layer.
  • Make the Caramel Layer: In a saucepan, melt butter and sugar over low heat. Stir in condensed milk and cook until thickened. Pour over the biscuit base and refrigerate until set.
  • Whip the Cheesecake Layer: Beat cream cheese, powdered sugar, and heavy cream until smooth and fluffy. Spread evenly over the caramel layer. Chill again for at least 2 hours.
  • Add the Chocolate Topping: Melt the chocolate with heavy cream over a double boiler or microwave in short bursts. Pour over the cheesecake layer, smoothing it with a spatula.
  • Chill to Set: Refrigerate the assembled cheesecake for at least 4 hours or overnight for best results.
