Step 1: Prepare the Coating Stations
Set up three shallow bowls. Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Step 2: Slice and Coat the Zucchini
Wash the zucchinis and slice them into ¼-inch rounds. Dredge each slice in flour, dip it in the egg, and then coat it evenly in the breadcrumb mixture. Set aside.
Step 3: Heat the Oil
In a large frying pan, heat vegetable oil over medium heat. The oil is ready when it shimmers or when a small breadcrumb dropped into it sizzles.
Step 4: Fry the Zucchini
Carefully place the coated zucchini slices in the pan in a single layer. Fry for 2-3 minutes per side or until golden brown and crispy. Avoid overcrowding the pan.
