Ingredients

For the grilled chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lime

For the mango avocado salsa

  • 1 ripe mango diced
  • 1 ripe avocado diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 small jalapeño seeded and minced (optional for heat)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • Prepare the chicken: In a bowl, combine olive oil, smoked paprika, garlic powder, salt, pepper, and lime juice. Rub this mixture all over the chicken breasts.
  • Preheat your grill or grill pan: Medium-high heat is ideal.
  • Grill the chicken: Cook chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
  • Make the salsa: While the chicken cooks, gently toss mango, avocado, red onion, cilantro, jalapeño, lime juice, salt, and pepper together in a bowl.
  • Serve: Place grilled chicken on plates and generously spoon mango avocado salsa on top.

Notes

  • Use ripe mangoes and avocados for the best texture and flavor in your salsa.
  • Don’t overcook the chicken; grilling just until juicy keeps it tender.
  • If you don’t have a grill, a grill pan or even a hot skillet works well.
  • For extra zest, add a sprinkle of chili flakes or a dash of hot sauce to the salsa.
