Instructions

  • Begin by preparing your green beans. Wash and trim the ends, then bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and slightly tender. Immediately drain and transfer them to a bowl of ice water to stop the cooking process. This keeps them crisp and vibrant.
  • While the beans cool, toast your almonds. In a dry skillet over medium heat, add the sliced almonds. Stir frequently for 3-5 minutes until they are golden brown and fragrant. Be careful not to burn them as they toast quickly. Once done, transfer to a small bowl and set aside.
  • In the same skillet, melt the butter over medium heat. Add minced garlic and cook for about 30 seconds until aromatic, being careful not to let it brown. The garlic infuses the butter with flavor that perfectly complements the almonds.
  • Drain the green beans from the ice water and add them to the skillet. Toss them gently with the garlic butter, cooking for 2-3 minutes until heated through. This step allows the beans to absorb the rich buttery flavor without becoming mushy.
  • Remove the skillet from heat and stir in the toasted almonds, lemon juice, salt, and pepper. Toss everything together until the beans are evenly coated. If using, sprinkle lemon zest on top for a refreshing citrus note.
  • Serve immediately. Green Bean Almondine is best enjoyed fresh while still warm, but it can also be prepared slightly ahead and reheated gently. Pair it alongside your favorite mains for a classic, restaurant-worthy side dish at home.
