Ingredients

For the Chicken

  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bowl

  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • ½ cucumber sliced
  • ¼ red onion thinly sliced
  • ½ cup Kalamata olives pitted
  • ½ cup crumbled feta cheese

For the Tzatziki Sauce

  • ½ cup Greek yogurt
  • ½ cucumber grated
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • Salt and pepper to taste

Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Coat the chicken breasts and let them marinate for at least 15 minutes (or overnight for best results).
  • Cook the Chicken: Heat a grill pan over medium-high heat. Cook the chicken for about 5-6 minutes per side until fully cooked. Let it rest for a few minutes before slicing.
  • Prepare the Tzatziki Sauce: In a small bowl, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well and set aside.
  • Assemble the Bowl: Divide cooked quinoa or rice into four bowls. Top with sliced chicken, cherry tomatoes, cucumbers, red onion, olives, and feta cheese.
  • Drizzle with Tzatziki: Finish with a generous spoonful of tzatziki sauce and enjoy!
