Ingredients

  • 2 cups plain or vanilla Greek yogurt
  • 2 –3 tablespoons honey or maple syrup optional for sweetness
  • ½ cup sliced strawberries
  • ½ cup blueberries
  • ¼ cup kiwi peeled and diced
  • ¼ cup granola
  • 1 tablespoon chia seeds or flax seeds optional
  • Small handful of dark chocolate chips or a drizzle of melted dark chocolate optional

Instructions

  • Prepare your tray: Line a baking sheet or tray with parchment paper to prevent sticking.
  • Mix yogurt base: In a bowl, mix the Greek yogurt with honey or maple syrup until smooth and lightly sweetened.
  • Spread the yogurt: Pour the yogurt mixture onto the prepared tray and use a spatula to spread it evenly into a ½-inch thick layer.
  • Add toppings: Scatter the sliced strawberries, blueberries, diced kiwi, granola, and any other toppings evenly across the surface. Press them lightly into the yogurt so they stick.
  • Optional touch: If desired, drizzle melted dark chocolate across the top or sprinkle on chia seeds for added nutrition.
  • Freeze: Place the tray in the freezer for at least 3 hours, or until the yogurt is completely frozen solid.
  • Break and serve: Once frozen, remove from the freezer and use your hands to break the bark into pieces. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

  1. Use full-fat yogurt for a creamier texture and better freeze-thaw consistency.
  2. Spread evenly to ensure the bark freezes uniformly and breaks cleanly.
  3. Chop fruit small so it’s easier to bite into and doesn’t overpower the yogurt.
  4. Don’t skip parchment paper — it makes removing the bark super easy and mess-free.
