Ingredients

  • 9 graham cracker sheets divided
  • 1 (3.9 oz) box instant chocolate pudding mix
  • 2 cups cold milk
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed
  • 1 (7 oz) jar marshmallow creme
  • 4 oz cream cheese softened
  • 1 tsp vanilla extract

Instructions

  • Layer the Base: Line an 8×8-inch pan with parchment paper. Arrange a layer of graham crackers on the bottom, breaking as needed to fit.
  • Make the Chocolate Layer: In a bowl, whisk the pudding mix and cold milk until thickened (about 2 minutes). Fold in half of the whipped topping. Spread evenly over the graham crackers.
  • Make the Marshmallow Layer: In another bowl, beat cream cheese until smooth. Add marshmallow creme and vanilla; mix until combined. Gently fold in the remaining whipped topping.
  • Add the Top Layer: Spread the marshmallow mixture over the chocolate layer.
  • Top with Crackers: Add another layer of graham crackers on top, pressing down lightly.
  • Freeze: Cover the pan with plastic wrap or foil and freeze for at least 4 hours or overnight.
  • Slice & Serve: Once firm, remove from freezer and let sit for 5 minutes. Cut into squares and serve immediately.

Notes

  1. Use softened cream cheese for easy blending with the marshmallow creme.
  2. Freeze long enough—at least 4 hours—for clean slicing and firm layers.
  3. Line the pan with parchment to lift the bars out easily before cutting.
  4. Customize your layers by adding crushed cookies, mini chocolate chips, or a drizzle of fudge for extra indulgence.
