Equipment

  • Mixing bowls
  • Hand mixer or whisk
  • 8×8-inch baking pan
  • Parchment paper
  • Spatula
  • Measuring cups and spoons

Ingredients

  • 1 cup cottage cheese
  • ½ cup unsalted butter melted
  • ½ cup cocoa powder
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips optional

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  • Blend cottage cheese in a food processor or blender until smooth. This helps create a silky texture in the brownies.
  • Mix wet ingredients – In a bowl, whisk together melted butter, cottage cheese, cocoa powder, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  • Combine dry ingredients – In a separate bowl, whisk flour, baking powder, and salt.
  • Fold together – Gradually mix the dry ingredients into the wet mixture until just combined. Stir in chocolate chips if using.
  • Bake – Pour the batter into the prepared baking pan and spread evenly. Bake for 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool and serve – Let the brownies cool in the pan for at least 10 minutes before slicing and serving.

Notes

  1. Blend the cottage cheese – This ensures a smooth texture without curds in the brownies.
  2. Don’t overmix the batter – Overmixing can lead to dense brownies instead of soft and fudgy ones.
  3. Use high-quality cocoa powder – This enhances the chocolate flavor and makes the brownies richer.
  4. Let them cool completely – Brownies firm up as they cool, making them easier to cut.
