Ingredients

For the Chicken

  • 2 boneless skinless chicken breasts (sliced)

  • 1 cup cherry tomatoes halved
  • ½ red onion sliced
  • 1 cucumber sliced
  • ¼ cup feta cheese crumbled
  • ¼ cup kalamata olives sliced
  • ¼ cup tzatziki sauce
  • Fresh parsley for garnish
  • Warm pita bread optional

Instructions

  • Marinate the Chicken – In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add sliced chicken and mix well. Let it marinate for at least 15 minutes (or overnight for better flavor).
  • Cook the Chicken – Heat a grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked and slightly charred. Remove and let rest.
  • Prepare the Bowls – Divide cooked rice (or quinoa) into serving bowls. Arrange cherry tomatoes, red onion, cucumber, feta cheese, and olives around the bowl.
  • Add the Chicken – Slice the cooked chicken and place it on top of the bowls.
  • Top with Tzatziki – Drizzle tzatziki sauce over the bowl and garnish with fresh parsley.
