  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 ounces cream cheese softened
  • ½ cup buffalo sauce adjust to taste
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese or mozzarella for milder flavor
  • ¼ cup blue cheese crumbles optional but recommended
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or parsley

Instructions

  • Start by preheating your oven to 350 degrees Fahrenheit. While it warms, gather all your ingredients and make sure your cream cheese is soft. Soft cream cheese blends more easily and ensures a creamy dip.
  • In a medium mixing bowl, combine the softened cream cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder. Stir until smooth and fully incorporated. You can taste at this point and add a pinch of salt or pepper if needed.
  • Fold in the shredded chicken and half of the shredded cheddar cheese. Mix until every piece of chicken is coated with the creamy, spicy sauce. If using blue cheese crumbles, gently fold them in as well.
  • Spoon the mixture into your prepared baking dish and spread it evenly. Sprinkle the remaining cheddar cheese on top for a golden, melty finish. Optional: add a few extra blue cheese crumbles for a tangy burst.
  • Place the dish in the oven and bake for 20 minutes, or until the top is bubbly and lightly golden. If you like extra browning, you can switch to broil for the last 2 minutes. Keep a close eye to avoid burning.

  3. Softened Cream Cheese is Key
    Make sure your cream cheese is at room temperature. Cold cream cheese will not blend smoothly and can create lumps.
